Starting today, iOS users will now be able to manually switch between the mobile or desktop versions of any website and set the default option for all pages that they visit. Microsoft began testing this feature last week but they’ve finally pushed it out to the iOS Microsoft Edge app today for everyone to use.
This feature is particularly useful when viewing a mobile version of a site that’s perhaps missing a menu item or a link that’s visible on the desktop layout. It can also be used when a website simply isn’t rendering properly. Note: You can test this feature with On MSFT as we have both a mobile and desktop layout.
Here’s the full release notes for this update though there really isn’t much besides the addition of the mobile/desktop switching feature.

With this release you can specify a preference for the mobile or desktop version of websites, and set your preference as the default for your device.
This release also includes general bug fixes and performance improvements.
